Farm of Hautes Chaumes

Production of farm cheese in the heart of Hautes Chaumes of Forez.

Nowadays, only farm men as those of the farm of Hautes Chaumes continue practicing production of mountain cheese, yesteryear style.

Discover the Hautes Chaumes farm, at 1000 meters altitude, on Valcivières.

Our cheeses have an incredible aromatic richness thanks to our craft technics.

According to seasons, we have at your disposal different type of cheese ; meltingly soft, acidic, spiky ...


Our herd is composed of 30 dairy cows and 20 heifers. Thanks to them, we produce 120 000 L of milk per year, totally transformed in cheese (Fourme) : about 10 tons of cheese.


Our farm is composed of hay, cereals and straw storage. We also have a dairy and cheese storage.


Around this establishment, we have about 15 acres for animals. In summertime (from June to October), cows pasture on Hautes Chaumes. For milking, we have a milking cart and a mobile dairy.

Mountain life

On Hautes Chaumes the grass is rich of flora that’s why in winter we make our cows pasture here to have a better milk production.
